Lobster is at its best when served with melted butter, lemon wedges and lots of napkins.  The traditional Atlantic way of boiling lobster is at the cottage, with friends and family, on a sandy beach over an open fire, or on the patio over a propane cooker, in a pot of boiling salt water fresh from the Atlantic Ocean.

Live Lobster

Live lobster should be cooked by the end of the day delivered.  To cook, first confirm that the lobster is alive.  Check for movement – a good method is to pull the lobster’s tail back to see if it springs back into the curled position.  Live lobster should be placed head first into a pot of boiling water with 1 tablespoon of salt for every litre of water.  The pot should be covered.  A one pound lobster should be cooked for 10 minutes and an additional 3 minutes for every additional pound.  The lobster is cooked when it is bright red and the legs pull away from the body with ease.

Pre-Cooked Lobster

Pre-cooked lobster can be re-heated by boiling for 2 - 3 minutes or using the oven or barbecue.  See Recipes for more cooking ideas.

Frozen Lobster

For the optimal taste, frozen lobster tails should be thawed for prior to cooking.  Once thawed, lobster tails will take about 10 minutes to boil.

Steaming Lobster 

Add your favourite vegetables and seasoning to a pot.  Add 1 1/2 inches of water.  Bring to a boil and add the steamer basket with the lobsters in it.  Cook for 15 minutes making sure there's enough water in the bottom of the pot.

Freezing Lobster 

If you happen to have any leftover lobster, it can easily be frozen.  Lobster must be cooked and cooled prior to freezing.  Lobster should be placed in a freezer container and covered with a cold brine solution.  Freeze lobster at 0 degrees Fahrenheit or -18 degrees Celsius.  Frozen lobster will keep for 4 to 6 months.

Barbecuing Lobster

Lobster can be barbecued on medium heat for 13 - 16 minutes.  If you'd like to add additional ingredients, split the lobster's underside lengthwise and inject your favourite seasoning.
